Raised on the East Coast, I was summoned to Berkeley, CA for a couple of months and decided to document the local pizzerias.  I cannot tell you which sauces use San Marzano tomatoes (nor do I care).  I try to always taste either a plain cheese slice or a Margherita slice for consistency and to judge the foundation of a pizza.
